Dreaming of Paris..

Thanks to my previous job I must have been to Paris 100’s of times but have never been lucky enough to make it further than the airport! :(. This afternoon I have been looking through pictures of the beautiful city and can’t help but dreaming of going there for our 1st wedding anniversary in May  and it will be spring – reportedly the best time to go!

I have to stop myself posting anymore photos because I could literally fill this blog with them. It would be such a romantic way to spend our first anniversary but it would have to involve  a lottery win as the wedding and honeymoon has drained our finances for the rest of our lives! lol. Plus we have our little doggie now so maybe we will look for a dog friendly hotel in this country and have a little family getaway.

Shop feature: Anita’s Gatos

It’s been a while since I  last did a shop feature, and when I came across Anita’s Gatos I knew it was time to do another.

Based in Staten Island, New York, Ana Bellino allows you to “Experience Art in the Cutest Sense.” You will find cute cat figurines, animal totems and other cute creature creations. Made entirely by hand the little totems start their life as a lump of polymer clay which is carefully molded and then hand-painted with acrylic paints to give each piece of clay their own unique character.

This is just a small selection of some of  the things in the shop, you really should check it out for yourself.

Elderflower Cupcakes

I only recently discovered I liked elderflower. I had always dismissed it before thinking it would taste too much like perfume or similar to Parma Violets, so I was pleasantly surprised when I tasted it and realised it was actually quite nice and even more surprised at what a nice cake ingredient it makes! I like how it reminds me of spring. The first thing I made with the cordial and the reason I discovered I liked elderflower was a pistachio and elderflower drizzle cake. I made it quite a while back now and neglected to document it, but I will make it again soon. As you may know I love a cupcake so couldn’t resist giving an elderflower cupcake recipe a try!

The result very pleasant, good if you like sweet things, the taste reminds me of something else but I cant quite put my finger on what it is. The good thing with this recipe is you can adjust the amount of elderflower you use to suit your personal taste.

175g Butter, softened

175g Caster sugar

3 Eggs

5tablespoons Elderflower cordial

175g Self raising flour

For the Icing

110g Butter, softened

250g Icing sugar

3 tablespoons elderflower cordial

80g Full fat cream cheese

Preheat oven to 180C/ 350F/ Gas 4. Line a 12-hole muffin tin with paper cases.

Cream the butter and sugar together until light and fluffy.

In a jug gently whisk together the eggs and cordial. Add a spoonful of flour to the creamed butter then slowly pour in the egg mixture beating constantly, sift in the remaining flour and mix until well combined.

Using an ice cream scoop, spoon a scoop of mix into each case, filling to about 2/3 full. Bake in the oven for approx. 20mins or until light golden brown and a skewer comes out clean. Leave in tin to cool for a few minutes before transferring to a wire rack to cool completely.

To make the icing cream the butter, icing sugar and cordial together for 3-4 minutes until light and fluffy. Beat in the cream cheese until you have a thick consistency. Spread or pipe over cupcakes.

Dreaming of spring..

The weather is taunting me, the past couple of days there has been a slight hint of spring in the air, but then the clouds roll in and then the heavens open again, and just like that it’s February again. So for this very reason I had to start a Pinterest board dedicated to Easter and Spring my favourite time of year. And so, to cheer you up dear readers here are some lovely spring time inspirations to brighten the dull and dreary and very wet!! days.

A new member of the family!

Meet Louie our 8 week old Cavapoo (King Charles Cavalier x Miniature poodle). He’s certainly been keeping us on our toes! We collected him last Sunday and it’s taken me till now to sit down and post about it :) We have been thinking about getting a dog for a while now and so this really is a dream come true.

He loves a cuddle!

He sleeps a lot!

But most of the time he wants to PLAY! At the moment we’re trying to get him out of the bitey stage, and we have a lot of war wounds to show for it. Toilet training in an upstairs flat is proving to be a challenge too! He has his booster jabs tomorrow and then he will be able to go out. We can’t wait :)
